Kirkland Hot Bread is a family‑owned Persian bakery in Kirkland, Washington, founded by two longtime friends from the Kurdistan region of Iran. As immigrants, they brought with them a deep love for their culture, their craft, and the ancient tradition of Persian bread baking. Today, that heritage lives on in every loaf we make — fresh, hot, and completely from scratch.

We bake authentic Persian breads multiple times a day using only four ingredients: wheat flour, water, salt, and yeast. No sugar. No baking powder. No baking soda. No preservatives. Just real, honest bread — the way it has been made for thousands of years.

Our mission is simple: bring the taste of true Persian bread to the Pacific Northwest, made fresh daily for the Kirkland, Bellevue, Redmond, and greater Seattle community.

Our Breads

Kirkland Bubble Bread (Lavash‑Inspired)

Soft, flexible, and incredibly light — perfect for wraps, sandwiches, tacos, Tahdig, Sambosa, and anything your imagination can dream up. A customer favorite for its versatility and melt‑in‑your‑mouth texture.

Signature Barbari

A classic Persian bread with a soft‑chewy interior, golden crust, toasted sesame seeds, and wheat bran on the back. The aroma of sesame and the subtle nuttiness of the bran make this bread unforgettable. Ideal for breakfast spreads, sandwiches, or enjoying warm on its own.

Taftoon

A round, wheat‑flour flatbread similar to a soft tortilla — perfect for quesadillas, kabobs, burritos, wraps, and everyday meals. Light, pliable, and deeply satisfying.

We bake all three breads fresh daily, in both white flour and whole‑wheat flour, Tuesday through Sunday.

What Makes Persian Bread Special

Persian breads are among the oldest breads in the world. Unlike thick‑crusted Western loaves, Persian breads are large, flat, soft‑chewy, and incredibly flexible. They are perfect for sandwiches, wraps, flatbreads, Tahdig, Samboosa, quesadillas, burritos, tacos, and more.

Historically, Persian bread was crafted to last through long winters without preservatives. Its unique thickness allows it to dehydrate naturally and be rehydrated later in soups and stews — a tradition thousands of years old.

Iran is a mosaic of ancient cultures, each with its own regional breads. At Kirkland Hot Bread, we honor that heritage by baking three of the most beloved Persian breads fresh every day for our Kirkland community.

Our Story

Two Friends, One Dream

Ali — The Master Baker

Ali is a classically trained artisan baker with over 20 years of professional experience in Kermanshah, Iran. He began as a young apprentice in a Barbari shop and spent decades perfecting the art of Barbari, Lavash, and Taftoon. He is also a skilled catering chef who has prepared food and sweets for large weddings and celebrations. His mastery forms the foundation of Kirkland Hot Bread.

Ghobad — The Craftsman Who Found Healing in Bread

Ghobad’s journey began in the trades — tile work, plaster, and fine finishing — where he developed a meticulous eye for detail. After immigrating to the U.S., he suffered from severe, unexplained digestive pain that made it impossible to continue his work. After countless tests and no answers, he changed his diet and discovered that fresh, additive‑free bread eased his symptoms dramatically. This transformation inspired him to pursue Persian bread baking with passion and purpose.

A Partnership Rooted in Heritage

Together, Ali and Ghobad opened the first true traditional Persian bread bakery in Washington State. Their commitment to clean ingredients, authentic recipes, and old‑world techniques is what makes Kirkland Hot Bread unlike any other bakery in the region.

Behind them stand their families — wives and children who supported every late night, every recipe test, every permit, and every sacrifice. This bakery is a testament to their resilience and love.
